Ingredients
Biriyani rice – 2 cups
Ghee – 5 to 6 tsp
Cashew nuts – ½ cup
Clove – 4
Raisins – ¼ cup
Crushed ginger – 1 tsp
Crushed garlic – 1 tsp
Chopped Green chillies -2
Lime juice -2tbs
Onions (sliced) – 2 no.
Cardamom – 4 no.
Cinnamon – 2 sticks
Bay leaves -2
Salt – to taste
Water/coconut milk – 5 cups
Method
Put the rice in water for half an hour.Drain and keep it aside. Heat some of ghee in a pan. To this, add cashew nuts and stir, till it becomes brown. Remove the cashew nuts.Now fry the raisins. Now put big onions. Stir and cook till it turns brown.Keep aside all the fried items.
Take some more ghee and heat in a big vessel. Put cloves, followed by cinnamon, cardamom, chopped green chillies, and ginger-garlic paste. Stir well. To this, add pieces of big onion and stir it becomes light brown. Now add the rice to the vessel.Add salt and mix well. Add some split pieces of bay leaf and pour water to cover the rice fully. Stir gently and close the vessel. Cook for five minutes.See if the water is completely absorbed and cooked well.When cooked add the lime juice and stir well. Garnish with cashew nuts, raisins, fried onions and serve hot.
Note:
The quantity of water may vary depending upon the rice used.So in open cooking you can add the water as per requirement.
