Sambar is a healthy dish with the vegetables and dal giving the right nutrition.Here is the recipe for the kerala sambar.

Sambar Parippu | 1cup |
Drum stick | 2 |
Ash Gourd | 150gm |
Brinjal | 2 |
Potato | 1 |
Tomato | 2 |
Ladies Finger | 5 |
Onion | ½ cup |
Coriander Powder | 21/2tbs |
Chilly Powder | 11/2tbs |
Turmeric Powder | 1/4tsp |
Fenugreek powder | 1/2tsp |
Asafoetida powder | 1/2tsp |
Curry Leaves | As required |
Oil | 3 tb spoon |
Mustard seeds | ½ tb spoon |
Tamarind | A small lemon sized |
Salt | To taste |
Method
Cut all the vegetables into pieces.Boil the Dal (Parippu) and add the vegetables and cook (except ladies finger and tomato).In a pan heat the oil and add the ladies finger cut into pieces,fry till cooked .Add all the powders and fry well add the tomato cut into pieces. Stir for sometime and close the pan with a lid and cook. Now add the vegetable dal mix and tamarind paste and bring to a boil.Season with mustard seeds and curry leaves.
