Ghee Rice (Malabar Style)

Ingredients

Khaima Rice 4 cup
Cinnamon 1” 3 sticks
Cloves 6
Cardamom 4
Ghee 1/2cup
Water 8 cups
Salt To taste
Cashew/Raisins As required
Onion 1/2 + 1/2
Coconut  Oil 3/4 cup

Method

Clean the rice thoroughly and drain the water.Heat 8 glasses of water in a bowl.In another stove heat oil and ghee together in a pan. Keep aside 3 tbs oil to fry cashews,raisins and thinly sliced onion pieces. Add whole spices and sliced onion to the hot pan.When onion becomes transparent add hot water to it. Add salt and rice. Let it cook in high flame.When water and rice comes to same level open the lid and check for the salt.Close the pan and cook till steam escapes. Put off the flame. Open after 10 minutes. Your ghee rice will be ready. Garnish with fried items and serve.
