In most of the Kerala meat dishes garam masla is an unavoidable ingredient.Instead of store bought masal try the home made garam masala to prepare the dishes. Here is the recipe for it.
Ingredients
Coriander Seeds : 2tsp
Fennel Seeds /Perum Jeerakam : 2 tsp
Cinnamon Stick/karugapatta : 2 2″ pieces
Cloves/Grambu : 4
Star anise / Takkolam : 3
Green Cardamom //elakka : 4 pods
Nutmeg : 1/2
Poppy Seeds: 1/4tsp
Method
Put all the ingredients over a hot vessel and slightly roast , the heavier one first. Put off the flame when it begins to change the colour.Cool and grind to a fine powder. Store in an air tight container and use when required.
